Practical programme strengthens restaurant management, food safety and culinary capabilities for participants at the Seongnam Mannam Regional Self-Sufficiency Center
SEONGNAM, South Korea — K-MIRACLE has conducted a comprehensive foodservice consulting and professional training programme for participants operating two self-sufficiency enterprises affiliated with the Seongnam Mannam Regional Self-Sufficiency Center: Seoro Joeun Restaurant and Juk Story.
The initiative was designed to help participants develop the practical capabilities required to operate stable and competitive foodservice businesses while establishing a stronger foundation for long-term economic independence.
Self-sufficiency enterprises are community-based businesses supported by the South Korean government, local authorities and regional self-sufficiency centres. They provide employment and vocational development opportunities for individuals from economically vulnerable backgrounds, enabling participants to acquire professional skills, gain workplace experience and jointly manage sustainable business operations.
Through this model, participants are supported not only in securing employment but also in building the operational experience and economic foundation necessary to achieve greater independence.
Building Sustainable Foodservice Operations
The programme combined professional instruction with field-oriented consulting across the core areas of restaurant management.
Training covered foodservice business administration, food hygiene, menu development, ingredient management, commercial district analysis, customer service, cost control, promotion and marketing. Rather than concentrating solely on culinary techniques, the programme addressed the broader operational disciplines required to manage a restaurant successfully.
The sessions were led by Professor Baek Hang-sun, a K-MIRACLE specialist instructor, President of the World Food Therapy Association and a Korean Master Chef.
Drawing on extensive experience in the foodservice industry, Professor Baek delivered a combination of theoretical instruction and hands-on culinary training. The programme placed particular emphasis on practical methods that participants could immediately apply within their own restaurants.


Consulting Tailored to Real-World Restaurant Management
Successful restaurant management requires considerably more than the ability to prepare food. Operators must maintain consistency across menu planning, ingredient purchasing, inventory control, food costs, sanitation, customer service and local market positioning.
The consulting sessions examined these interconnected aspects through practical examples drawn from real foodservice operations.
Participants were introduced to methods for improving menu administration, using ingredients efficiently, responding to customers, analysing surrounding commercial districts and developing promotional strategies suited to their individual business environments.
Operational examples and case-based guidance were incorporated throughout the programme to help participants identify solutions that could be implemented directly in their workplaces.
The training also highlighted the importance of understanding customer demand, nearby competitors and local traffic patterns when making decisions regarding menu selection, pricing and marketing.
Strengthening Food Hygiene and Workplace Safety
Food hygiene and safety management formed another central component of the programme.
Participants received instruction on foodborne illness prevention, safe ingredient storage, the cleaning and sanitisation of cooking utensils, and the proper maintenance of food preparation areas.
The training examined hygiene requirements at every stage of restaurant operations, from the receipt and inspection of ingredients to storage, preparation, cooking and final service.
Participants also learned safe working procedures intended to reduce the risk of accidents in commercial kitchens. By connecting regulatory and theoretical principles with routine workplace practices, the programme sought to strengthen both food safety awareness and day-to-day operational discipline.
Hands-On Training Using Standardised Recipes
The practical culinary sessions focused on dishes suitable for immediate application in commercial restaurant settings, including spicy marinated chicken bulgogi, gondre rice, seasoned radish salad and soft tofu stew.
Participants completed each stage of the cooking process using standardised recipes, from ingredient preparation and sequencing to seasoning ratios, cooking methods and final presentation.
The use of standardised recipes was emphasised as an essential management tool for maintaining consistent flavour, portion size and product quality, particularly in workplaces where several employees may be responsible for preparing the same menu item.
Participants also learned menu-specific preparation standards and workflow procedures designed to improve efficiency and ensure consistency regardless of which team member performs the work.
Developing Professional Talent and Field-Level Capabilities
By integrating classroom instruction, management consulting and hands-on culinary practice, the programme was structured to close the gap between professional education and real-world restaurant operations.
The curriculum addressed the full range of competencies required in the foodservice industry, including sanitation, menu management, customer engagement, commercial district analysis and marketing.
